Mason’s Famous Lobster Rolls, which originated as a small lobster shack in Annapolis, Maryland in 2014, is opening its first Colorado location in the former Ink Coffee space on Second Avenue. Father-and-son owners Gary and Michael Findlay plan to open the fast-casual restaurant in the next two months, and we couldn’t be happier to hear the news. Mason’s serves classic lobster rolls chilled with mayo and butter, Connecticut lobster rolls warm with butter, lobster salad rolls with mayo and celery, and a shrimp roll. The best part? Mason’s gets its lobsters from a single supplier in southern Maine, where it’s cooked and distributed while still fresh.
