Rare Bird, Denver’s newest rooftop set atop HALCYON, a hotel in Cherry Creek, made its debut this summer, as the boutique hotel’s food and beverage programming soars to new heights. Rare Bird overlooks the heart of Cherry Creek and celebrates the spirit of the city’s unabashed personalities with playful cocktails and inventive dishes curated by newly-appointed Executive Chef Daniel Young.

Guests and locals alike are invited to enjoy the lively atmosphere and panoramic Rocky Mountain views while choosing from a well curated menu of light bites and signature dishes. 

Highlights include snacks like white cheddar truffle popcorn; sweet chili roasted nuts; and beet hummus with seasonal crudité and housemade pita.

The menu also introduces indulgent signature dishes like Rare Bird Wings with mango buffalo sauce and shaved vegetables as well as the Rare Bird Dog complete with creamy coleslaw, Flaming Hot Cheetos, and dijon. Plus, some buzzy beverages outlined below:

  • Firebird featuring blanco tequila, grapefruit, spicy basil syrup, agave and soda
  • First Class boasting Altos tequila, Aperol, grapefruit and lemon
  • Early Bird with New Amsterdam vodka, Mr. Black’s coffee liqueur, cold brew and vanilla.
